Spinach and Artichoke Dip Bread Bowl
Perhaps we moved on too quickly from bread bowls; I mean, they really are a bowl you can eat. Especially when the bowl is crusty, rustic sourdough bread and it’s filled with creamy, salty, garlicky artichoke dip. I’ve never seen a crowd-pleaser quite this pleasing.
Servings: 3 to 4 people

Ingredients
1 round crusty bread
1 block cream cheese
½ cup spinach
1 cup chopped artichokes
½ cup grated parm
¼ cup shredded mozzarella
⅓ cup mayonnaise
2-3 cloves garlic
½ diced shallot
salt and pepper to taste
1 tablespoon butter
Instructions
Preheat the oven to 365 degrees Fahrenheit.
Cut the top of your bread off horizontally and then hollow out the loaf. Coat the inside in olive oil and bake it for 20 minutes.
Sauté garlic and shallots in butter in a medium pan over medium heat until translucent.
Add in artichoke hearts and cook for 2 minutes.
Add in spinach and cook for another 2 minutes on medium low heat. Remove from heat.
Add in softened cream cheese and once melted, add in mayo and mozzarella cheese.
Once everything is well-incorporated sprinkle in a hefty amount of Parmesean cheese and season with salt and pepper. Pour into the bread bowl and serve.
