Miso Chicken & Corn Salad

Be the best-dressed at your office lunch hour (in terms of food, of course) when you bring this miso chicken and corn salad. Umami, bright, mustard-y, delicious, nutritious.

Total time: 15 minutes

Ingredients

1 tablespoon white miso

1 tablespoon whole grain mustard

2 teaspoon lemon juice

3 tablespoon olive oil

pinch of salt and pepper

½ shallot

1.5 poached chicken breast

drained, canned sweet yellow corn

sliced avocado

green onion

chopped cilantro



Instructions

  1. Whisk together miso, mustard, lemon juice, shallot, and salt & pepper in a bowl. 

  2. Slowly drizzle in olive oil to ensure it emulsifies.

  3. To plate, add shredded chicken, corn, avocado, thin strips of scallions, cilantro, and drizzle over miso dressing.
