Gujarati-Style Chai

A staple in every Indian household—here is my family’s recipe for Gujarati-style chai. Perfect for wintery mornings and sleepy afternoons with a small assortment of biscuits and crackers.

Ingredients

4 ounces of water

1 teaspoon loose black tea (from Indian store)

7 fresh mint leaves

2 teaspoons freshly grated ginger

3/4 cup of milk

1 1/2 teaspoon cane sugar (raw cane sugar is preferred)

1/4 teaspoon chai masala

Instructions

  1. Add tea leaves to simmering water and let it simmer for 3 minutes before adding in mint and ginger. Simmer for another 3 minutes.

  2. Add milk and sugar. Continue simmering and mixing occasionally so that the milk doesn’t burn on the bottom of the pot.

  3. Add chai masala and bring it up to a rolling boil two times, and remove from heat in between each (otherwise, the boiling milk will overflow).

  4. Strain over a mug and serve.
