Asian-Inspired Peanut Spaghetti

Refreshing peanut noodles but with a spaghetti twist. Perfect for a satiating, quick and easy lunch with pantry staples.

Total time: 20 minutes

Ingredients

8 ounces of spaghetti

⅓ cup of soy sauce

2 tablespoons rice vinegar

2 tablespoons sesame oil

1 tablespoon sugar

1 tablespoon toasted sesame seeds

1 tablespoon chili oil

½ cup smooth peanut butter

2 cloves of garlic

knob of fresh ginger

⅓ cup pasta water or regular water

optional: cilantro, green onion, cabbage, jalapeño, carrots

Instructions

  1. Boil pasta according to the pasta packet instructions, then rinse with cold water and set aside. Set aside 1/3 cup of pasta water.

  2. In a blender, blend soy sauce, rice vinegar, sesame oil, sugar, toasted sesame seeds, peanut butter, chili oil, ginger, garlic, and the pasta water together until smooth. If you don’t have a blender handy, feel free to mix thoroughly in a bowl with a whisk—just grate the ginger and garlic. Add more water if the sauce is too thick.

  3. Pour the sauce over the noodles and serve with any ingredients you have in the fridge: diced cilantro, diced green onion, finely shredded cabbage, sliced jalapeño, or shredded carrots.
