Fruit Salad

A marriage of the fruity and the decadent, this fruit salad is laden with your favorite fruits and nuts, spiced with cardamom and enrobed in a rich custard. An Indian favorite in the summertime, or year round!

Servings: 4 to 6 people

Total time: two hours

Ingredients

½ gallon of whole milk

¾ cup of whole milk

5-6 tablespoons of custard powder

¾ -½ cup of sugar

fruit of choice (finely diced)

drained canned fruit cocktail

nuts of choice (I like walnuts and cashews)

1 pint of vanilla ice cream

1.5 teaspoon cardamom power



Instructions

  1. Heat half gallon of milk until steaming, but be sure not to boil.

  2. Add in sugar to milk and mix until dissolved.

  3. Whisk together custard powder with ¾ cup of milk and slowly pour into the steaming pot of milk.

  4. Remove from heat and pour into an airtight vessel. Let it cool completely in the fridge.

  5. Dice and chop fruits. Combine all of the fruit, fruit cocktail, and nuts in a large container or bowl.

  6. Add in cardamom powder and the ice cream to the container.

  7. Pour the chilled custard milk over the fruit and ice cream, and let ice cream melt into the mixture before mixing and serving.
