Sheero (Semolina Pudding)

Also known as suji ka halwa, sheero is a firm pudding that seems to melt on your tongue. It is fragrant and nutty, and bejeweled with golden raisins and chopped nuts. If you have semolina and ghee in your pantry, give this simple recipe a try for a warm dessert in the wintertime.

Servings: 3 to 4 people

Total time: 15 minutes

Ingredients

½ cup ghee

1 cup fine semolina

3 cups milk

½ teaspoon cardamom powder

nuts of choice

raisins



Instructions

  1. Toast semolina in ghee in a medium saucepan over medium heat until it turns light brown. This should take 8-10 minutes and you’ll smell the toasty and nutty aroma.

  2. Add in steamed milk and mix rapidly to combine.

  3. After about 4-5 minutes, add sugar, cardamom, nuts and raisins. Mix well to combine and remove from heat. Eat while warm.
