Tom Kha (Thai Coconut Soup)

A long-time favorite of mine, tom kha is the ultimate comfort soup that is spicy, tangy, and coconutty. Throw in any protein and vegetables you have in the fridge into the pot and let the flavors of the tom yum paste meld over your additions.

Servings: 2 people

Total time: 20 minutes

Ingredients

5 tablespoons of tom yum paste (I use jarred)

1.5 cups of water

1 can of coconut milk

additions:

chicken breast

chopped carrots

baby corn

mushroom

shrimp

chopped green onion

chopped cilantro



Instructions

  1. In a medium saucepan, add in the water and heat over medium heat until warm.

  2. Add tom yum paste to warm water and bring to a light simmer.

  3. Add in sliced chicken breast and cook for 2 minutes before adding in coconut milk.

  4. Once that starts to simmer, add in heartier vegetables (i.e. carrot).

  5. After a few minutes, add in baby corn, mushroom and shrimp.

  6. Before serving, add in chopped green onions and cilantro.
