5-Ingredient Chocolate Mousse

The best low-effort and high-reward dessert there ever was. Have on Christmas Eve, New Year’s Eve, or simply any Friday night in.

Total time: 2 to 3 hours

Ingredients

Mousse:

1/2 cup dark chocolate

1/2 cup semi sweet chocolate chips

1/2 cup heavy cream

pinch of salt

1 shot of espresso or 1.5 tablespoons of instant coffee

Whipped cream:

2/3 cup chilled heavy cream

2 tablespoons powdered sugar

1 teaspoon vanilla extract

optional: 1/2 teaspoon peppermint extract

Instructions

  1. To a double boiler*, add chocolate, espresso, and the 1/2 cup of heavy cream and continuously stir until fully melted. Remove the bowl from heat and then cool for 15 minutes.

  2. In a separate bowl, add 2/3 cup of chilled heavy cream and sifted powdered sugar. Whisk or beat with a mixer until stiff peaks form, and then add vanilla and beat until combined. If you want peppermint chocolate mousse, substitute 1/2 teaspoon of peppermint extract instead of the vanilla.

  3. Slowly fold in the cooled chocolate mixture to the whipped cream. Be sure not to overmix.

  4. Place in serving cups and let it chill in the fridge for 1 to 2 hours.

  5. Top with extra whipped cream and chocolate shavings.

Note*: For a double boiler setup, place a stainless steel bowl or heat-resistant bowl over a small pot of simmering water. The flame should be on low heat—do not boil the water. The bottom of the bowl should fully cover the circumference of the pot, and the steam from the water will melt the chocolate mixture in the bowl.
