Bibimguksu (Korean Spicy Cold Noodles)

Fiery red in both looks and taste, bibimguksu is the perfect lunchtime treat when you’re craving something flavorful and bold. It comes together quickly and will be sure to satisfy.

Ingredients

1 tablespoons gochugaru

1 tablespoons gochujang

1 tablespoon rice vinegar

1 tablespoon sesame oil

1 teaspoon soy sauce

1 clove of grated garlic

2 teaspoons sugar

1 teaspoon sesame seeds, for garnish

1 stock of green onion

one serving of somen noodles

Instructions

  1. Boil somen noodles according to the package instructions, strain and wash in cold iced water. Set aside.

  2. Combine gochugaru, gochujang, soy sauce, sesame oil, garlic, rice vinegar, and sugar in a small bowl and mix. 

  3. Pour sauce over the chilled noodles, garnish with scallions and sesame seeds.
